The Rio Grande Mexican Restaurant is a company that owns six restaurants in the state of Colorado. The company began in Fort Collins, Colo., in 1986 when it was founded by Andre and Stephen Mouton and Pat Mcgaughran. The company opened a restaurant in Boulder, Colo., in 1989. The company also has restaurants in the Coloradan cities of Greeley, Steamboat Springs, Lone Tree and Denver. Each restaurant is named The Rio Grande Mexican Restaurant, and serves cuisine inspired by the Tex-Mex culinary traditions in the hometown of the founders, Austin, Texas. The restaurants fry corn chips on-site, use fresh ingredients and prepare a special blend of margaritas in which the company takes great pride. Reservations and party room rentals are available at the Denver and Fort Collins locations. Customers are limited to three margaritas per visit.
